Banfi was among the seven historic houses that, claiming the Piedmont roots of traditional Italian sparkling wine, in 1990 gave the go-to project Spumante Metodo Classico in Piedmont. In 2008 was finally obtained the Alta Langa DOCG appellation.

Colour: pale gold color with fine and very persistent perlage.
Bouquet: intense and fragrant, with notes of yeast and vanilla.
Taste: well-structured, full, slightly acidulous, harmonious, savory with a bitter base. The addition of a percentage of the cuvée from the previous vintage, aged in wood, endows this sparkling wine with its roundness, structure and longevity.

Pairings
Ideal as an aperitif, perfect with oysters and other raw or cooked seafood, it pleasantly accompanies also appetizers and first courses based on fish. Particularly suitable paired with shellfish.
Why we like it
Alta Langa is a new Piedmontese DOC appellation. In each bottle of Cuvée Aurora, the current vintage is enriched by the addition of 10% of the previous vintage cuvée aged in oak barrels. The result is very round, rich and long aging sparkling wine.
